Abstract
Pulsacyjne pole elektryczne (PEF) jest coraz powszechniej stosowane w badaniach nad rozwojem nowych technologii przemysłu spożywczego. PEF ma zastosowanie m.in. do: wspomagania procesów ekstrakcji, suszenia, zamrażania oraz inaktywacji szkodliwych mikroorganizmów. W pracy dokonano krytycznego przeglądu możliwości zastosowania PEF do: zwiększenia odzysku prozdrowotnych składników żywności, umożliwienia tworzenia przyswajalnych kompleksów żelaza oraz akumulacji pierwiastków w komórkach drożdży. Pulsed electric field (PEF) is increasingly being used in research on the development of new technologies of the food industry. PEF is used, among the others, to assist in the extraction, drying, freezing and inactivate harmful microorganisms. Critical review of the possibilities of applications of PEF to increase the recovery of nutrient ingredients of food, to enable the creation of iron complexes and accumulation of elements in yeast cells, have been done in this work.
